Eunice Olumide (MBE), the founder of start-up business, Banrigh O Drinks sought the expertise of the Scottish Centre for Food Development and Innovation (SCFDI) to develop her product concept range. Eunice proposed the creation of two products in the non-alcoholic drinks category – a white sparkling and a rose sparkling version.
Banrigh provides luxury non-alcoholic beverages for health-conscious consumers, catering to fine dining, unique events, five-star restaurants, bars, private members spaces and resorts. In addition, Banrigh offers affordable premium and sustainably packaged options available at local high street supermarkets and specialist retail stores. Born in Scotland, produced in Scotland, the brand is the creation of Scottish Supermodel, V&A Design Champion, and serial entrepreneur Eunice Olumide. Eunice, who was also born and raised in Scotland, channels her passion for fresh Scottish produce and Scotland's rich and diverse history into Banrigh’s innovative beverage portfolio. She exemplifies the cosmopolitan nature and magical appeal of Scotland. With her extensive following and media presence, Eunice is the driving force behind Banrigh, propelling the brand forward in both sales and visibility.
The SCFDI are experienced in developing innovative products, sourcing local ingredients in the correct quantities for manufacturing, achieving nutritional targets, food labelling and understanding of both nutrition and health claims in the national standards framework
Scottish Funding Council’s Standard Innovation Voucher funded the project.
Throughout the project, the company provided feedback on product samples and was given advice on how to manufacture the products. The project resulted in development of the two products and the SCFDI provided all essential information to trial and launch on to the market.

With extensive understanding of the non-alcoholic drinks space, and a substantial social media following, Eunice was aware of the impact and increase of consumers seeking a viable, premium non-alcoholic sparkling drink with the quodos and mouthfeel of Champagne. The company required the assistance of the SCFDI to create formulations with the desired flavour and texture profiles and provide a scalable methodology for two products: Sparkling White and Sparkling Rose.
The two products developed during this project had to meet the following criteria;
- Utilise real, recognisable ingredients, natural flavours and no added sugar or sweetener
- Additional ingredients should be sourced from Scotland
- Claim for additional benefits arising from addition of B Vitamins and Zinc
- Ensuring a non-alcoholic claim on pack (less than 0.5% alcohol)
- Achieve the company’s desired cost target
A critical path for the 4-month project, setting out key deliverables and deadlines, mutually created by Eunice and SCFDI.
The project team trialled various permutations of teas and herbs to create the best infusions as a base for the drink. When creating the small-scale kitchen methodology, the SCFDI considered how this would be upscaled to production.
Throughout the development of the products, nutrition was calculated by SCFDI to ensure the products are within the non-alcoholic criteria (less than 0.5% alcohol) and achieved desired health claims.
During the project, the company attended a product development day at Queen Margaret University to facilitate tasting samples, providing real-time feedback, recipe development and to observe and take part in the mixing methodology. From this experimental day, another non-alcoholic drink was created (Eunice drink), the information was provided for this in addition to the 2 targeted sparkling drinks.
The finalised formulations were sent for nutritional analysis at a UKAS accredited lab to determine nutrition declaration for on-pack labelling.
The SCFDI provided information packs for White Sparkling; Rose Sparkling and Eunice drink. This pack included information on; formulations, kitchen methodology, upscaling methodology, nutrition declaration and claims, ingredient declaration and ingredient suppliers. The SCFDI provided invaluable advice on how to progress to the next stage of their business co-manufacturing with a Scottish based drinks manufacturer.
Using the information provided, the company can run production trials and conduct on-trade tastings and assessment for hospitality clients. Once completed the products will be ready to launch.
